Monday Meals: Weekly Meal Plan


Okay, so yesterday (Sunday), we fully intended to have Bacon-Tuna Casserole (a concoction I put together combining two recipes). We had it ready to go in the slow cooker and everything! The Hubster got nervous that the noodles were going to burn (he’d left it on high), so he came home real quick to check it out. And, it’s a good thing he did! The noodles weren’t burned…they weren’t even on!! Ahhh…the joys of a busy Sunday morning! So, he turned it on then and I let it cook into the early afternoon and put it in the fridge for another day this week.

I’m continuing to make headway on clearing out our pantry for our transition to Real Food cooking!!! So, here’s what we’re eating this week!

Monday 4/30
Breakfast: Cold cereal
            Lunch: Grilled Turkey and Cheese
            Dinner: Frito Chili Pie or Spaghetti Red (I use the same sauce for both, so they can choose either chips or noodles!)
Tuesday 5/1
            Breakfast: Poptarts
            Lunch: HomemadePizza Pockets
            Dinner: Bacon-Tuna Casserole, green beans, homemade bread
Wednesday 5/2
            Breakfast: Homemade Pancakes, Sausage
            Lunch: Chicken Nuggets
            Dinner:  CheeseburgerMac & Cheese
Thursday 5/3
            Breakfast: Scrambled Eggs w/ bacon & cheese
Lunch: Cheese Quesadillas, grilled chicken fajitas
Dinner: Leftovers
Friday 4/27
            Breakfast: Homemade Poptarts
            Lunch: Leftover Cheeseburger Mac
            Dinner: Homemade Chicken Nuggets, homemade fries

            Breakfast: Baked French Toast
            Lunch: TurkeyStroganoff, green beans, homemade bread

Monday Meals: Weekly Meal Plan


You ever have one of those weeks where nothing goes as planned? Yep, that was last week for us! We were stuck in the house until Wednesday afternoon since the transmission went out on our van…again! Thankfully, this time it was under warranty. But, that put a bit of a strain on our eating plan, because I didn’t have a vehicle to get to and from the store as needed. So, this week you’ll see a few repeats that aren’t really repeats. And, we’ll finally get to take Miss Priss out for her birthday lunch this week, which was put on hold with the van fiasco as well.

I’m continuing to make headway on clearing out our pantry for our transition to Real Food cooking!!! So, here’s what we’re eating this week! One week closer to Healthy Eating!!

Monday Meals: Weekly Meal Plan


We had a GREAT weekend celebrating our Risen Savior!!! I am indeed a blessed woman, wife, mother, daughter, sister, granddaughter and niece! It was so fun watching my kids, niece and nephew hunt eggs. Their faces just lit up when they found them. Then, they had math lessons by counting them out! So much fun!! Hope you all had a blessed weekend too!

But, it’s back to normal today.

This week is Spring Break. Well, for most kids it isbut with the events of the past few months we’ve had enough breaks. So, we’re pressing forward! We are also doing some major cleaning this week!! Hopefully purging our toys, re-doing the pantry and getting our central closet more useable.

Monday Meals: Weekly Meal Plan


This past weekend was a whirlwind of laundry, cooking, shopping and even some relaxation in theresomewhere! The first of my JBF sales completed on Saturday and I picked up my un-sold items Sunday evening. I put in 86 clothing items (a lot for me, but not in the grand-scheme of things let me tell yousome people put in 300+!!), but I only picked up 19!!! I’d say that’s pretty good!!!

Now that the weekend's over it's back to business as usual. So, here is this week’s (somewhat unhealthy, but YUMMY) meal plan!

        Lunch: Hot Chicken/Cheese Deli Roll (using this recipe)
        Dinner: Honey Chicken and brown rice

Monday Meals: Weekly Meal Plan


The past few weeks have been quite a blur around here. (Read about it here.) Last week we flew by the seat of our pants for meals as I was trying to play catch-up around the house. I’m so glad to be back on track with our meal plans this week though. I must admitafter making Meal Plans for nearly 2 years now, I feel completely lost when I don’t have my meals planned out. I have become dependant on them! This is just one thing that really makes my house and day run smoother.

Now, with that being saiddoesn’t this cartoon ring true at one time or another? Even though I have things planned out, there are just times when I am exhausted or feeling run-down. And those are the days when it takes all I have to get meals together. At least I don’t have to think about them, right?!

Baking Bits: Homemade Cheeseburger Macaroni


First off, I want to apologize for missing yesterdays post. Its still been one of those weeks. I’m still playing catch-up with dishes, laundry, cleaning and just life in general. I was on a roll yesterday morning but was quickly de-railed by my own exhaustion. UGH!!! It’s getting MUCH better though and so are the littles.

That being said, my 21mos old daughter (or at least she’ll be 21m on Friday) is having tubes put in on Friday. We’ve just finished a 4-week course of TWO different antibiotics to get rid of an ear infectionher 12th since January 2011. So, this momma decided it was time to be done with the antibiotics and just get the tubes. So, this Friday our 3rd child will undergo anesthesia and get tubes. So, if you don’t mind, please be praying and thinking about us this weekend as we comfort her.

Sometime last year I decided to do away with the boxed dinners. You know...Hamburger and Tuna Helpers? So, I searched the internet and found this YUMMY recipe. It quickly became one of our MOST favorite recipes. Wellactually its two recipes that you can combine for one FABULOUS dish. The Hubster absolutely LOVES these two dishes. They were both inspired by this and this from Heavenly Homemakers. We’ve just tweaked them to make them what we want. So, here’s how I tweaked them. ENJOY!!!

Creamy Mac ‘n Cheese
2 1/2 cups any pasta you like (my kids prefer Elbow noodles, but any will work)
2 cups whole milk
2 cups water
2 cups shredded cheese (I use cheddar, but you can use whatever you like)

Pour milk and water into large sauce pan. Heat thoroughly on medium-low heat, so you don’t burn the milk (and so you don’t have to stand there stirring constantly). Just before it starts boiling, pour in the pasta and continue cooking over medium-high heat STIRRING ALMOST CONSTANTLY until the pasta is tender (10-15 minutes). You’ll want to watch the level of milk as you cook. Be sure it doesn’t fall below the noodles too fast. About 12-14 minutes is usually how long I cook it. At that time you’ll want the milk just below the noodles. (Don’t let the noodles soak it all up, because you’ll need it to mix in the cheese.) Remove from heat.  Add cheese and stir until melted.  Serve immediately.

Cheeseburger Macaroni
½ - 1 Pound Ground Turkey (I use ½lb because I felt the meat over-powered the noodles.)
1 Tablespoon Taco Seasoning (I use this homemade recipe)
1 Recipe of Creamy Mac and Cheese (from above)

Okay, are you ready for these tricky directions???  Make the Creamy Mac and Cheese. Meanwhile, brown the meat.  Once the meat is fully cooked, sprinkle in the taco seasoning and 
¼ cup water.  Stir the seasoned meat into the Creamy Mac and Cheese.  Done!!  Yep, that’s it!!!

This recipe is so versatile. You can substitute Ground Beef or even Tuna for the Ground Turkey. Now, if you do the tuna route, I would definitely take her advice and use White Cheddar!! That way it looks just a little different than your Cheeseburger Mac (and you’ll family won’t even know you’re using the same recipe).

This is one of our absolute FAVORITE recipes! Once you make it for the first time and know about how long to cook it and what it will look like.

NOTE: The noodles will not taste like ones you’ve cooked in water. They do soften, just not as much in milk. Just test-taste them to make sure they’re not too firm. Trust me, cooking them longer doesn’t make a difference. (at least not past 20 minutes)
